Easy tomato soup

 Tonight I made this soup from The Seasoned Mom and I quickly came to put it on the blog so I didn’t lose it! I didn’t want to go to the store and wanted to use what I had on hand. So I googled “tomato soup from spaghetti sauce”. You’re probably cringing. But THAT’S how much I didn’t want to go to the store. Anyway- this was absolutely delicious! I added cheese tortellini and I even called it “Pizza Soup” (heaven forbid I call it tomato) and some of my kids had thirds! I definitely recommend a really flavorful and higher quality sauce! I used a Ragu one with Parmesan and Asiago.


3 T EVOO

Minced Garlic (About 2 T)

Onions ( I used about 2 T of dried)

carrots (I omitted this)

1 15 Oz jar of spaghetti sauce 

4 cups chicken broth

Can of Navy  beans (drained)

Salt, pepper and crushed red pepper to taste.


Sauté onions and garlic in oil until browned. Add remaining ingredients. I added the tortellini here. I used frozen cheese filled onesBring to boil. Simmer for ten minutes 

Zuppa Toscana

 Directions: This is a one pot recipe.  Cook sausage. Add real bacon bits (it’s what I had on hand and worked great) and onions.Cook until meat cooked through.  Add garlic. Add chicken stock and bring to boil. Add potatoes and cook for about ten minutes until potatoes are cooked through. Add spinach. Cook down. Add cream and salt and butter. Serve once it’s heated through. Garnish with bacon bits and grated Parmesan cheese.


Ingredients :

  • 5 slices bacon , diced
  • 1 pound spicy Italian sausage , casings removed
  • 1 small sweet onion , diced
  • 3 cloves garlic , minced
  • 32 ounces low-sodium chicken stock
  • 3 medium russet potatoes , peeled and diced small (about 1/2-inch cubes)
  • 3 cups baby spinach
  • 3/4 cup heavy cream
  • salt and pepper , to taste
