Directions: This is a one pot recipe. Cook sausage. Add real bacon bits (it’s what I had on hand and worked great) and onions.Cook until meat cooked through. Add garlic. Add chicken stock and bring to boil. Add potatoes and cook for about ten minutes until potatoes are cooked through. Add spinach. Cook down. Add cream and salt and butter. Serve once it’s heated through. Garnish with bacon bits and grated Parmesan cheese.
Ingredients :
- 5 slices bacon , diced
- 1 pound spicy Italian sausage , casings removed
- 1 small sweet onion , diced
- 3 cloves garlic , minced
- 32 ounces low-sodium chicken stock
- 3 medium russet potatoes , peeled and diced small (about 1/2-inch cubes)
- 3 cups baby spinach
- 3/4 cup heavy cream
- salt and pepper , to taste
